April Dinner: Hapunan by Chef Roe

Rose Anne Meagher (most people call her Roe), first brought Filipino cuisine to Transformation Table in January 2018. None of our guests had ever eaten Filipino food before, and Roe and her traditional dishes were a hit. We are thrilled to have her back!

Chef Rose Anne Meagher

Cooking has always been a part of Roe’s life, thanks to her father's influence. He was a chef and owned two restaurants that served Filipino and American cuisine. She vividly recalls standing on a stool at the age of five, watching him prepare dinner, never using recipes – he just said, “use this, and this…” His rule was simple: she couldn't play until she'd observed him cook. Little did she know, those moments would shape her future in ways she couldn't imagine.

Initially, Roe enrolled in culinary courses to please her dad, but her academic journey took a detour when she decided to pursue a degree in Mass Communication. Despite this shift, her love for cooking never waned. After graduating, she embarked on a career in the healthcare industry, spending 27 years as a Regional IT Training Director in Massachusetts. It was a demanding role, requiring her to manage operations across ten states in the Southeast region.

Despite the demands of her corporate job, Roe always found time to indulge her passion for cooking. Catering for friends and family became a welcome escape from the rigors of corporate life. With each event, her love for cooking grew, and she began to realize that her true calling lay in the culinary world.

In 2017, a significant move to South Carolina provided the perfect opportunity to pursue Roe’s culinary dreams. Armed with determination, she obtained her business license and officially launched her catering venture. What began as a side gig soon evolved into a full-fledged business, offering meal prep services to busy individuals and families.

However, Roe yearned for something more, something that would challenge her in new ways. That's when the idea of starting a food truck business took root. It was a daunting prospect, but she was determined to take the plunge. The excitement of hitting the road, serving up delicious meals to eager customers, was irresistible.

Launching her food truck business has been the most exhilarating, rewarding, and challenging experience of Roe’s life. From navigating regulatory hurdles to managing the logistics of a mobile kitchen, every day presents a new challenge. But through it all, Roe discovered a sense of fulfillment and purpose that she’s never experienced before.

Despite the challenges, Roe wouldn't trade this journey for anything. Cooking has always been her passion, and now, it's her livelihood. As she continue to grow and evolve as a chef and entrepreneur, Roe is grateful for the lessons learned and the experiences gained along the way.
